Halloween is coming! Soon, we will turn our attention to slutty nurse costumes, the Monster Mash, and stomach-sickening levels of candy corn. But for now, let’s talk about smashing pumpkins. (Not the band, not the act of destruction, but the British adjective).

A cup of pumpkin only has 30 calories, and is loaded with vitamins. That Jack-o’-Lantern of yours even has a bit-o’-fiber and antioxidants!

I know what you’re thinking. Pumpkins are meant for clobbering, carving, or pie filling. But there is so much more you can (and should!) do to pumpkins in the kitchen — and don’t you dare throw out those precious seeds.
