Glasses up!

While many celebrated on behalf of Relay for Life with kegs this weekend, beer may not be your thing. Perhaps a classy night-in with your friends sounds more appealing. And what better way to honor Relay then with a menu full of purple cocktails and food! Here’s to partying with a purpose!

Positively purple menu:

Cocktails:

Purple Bomber:

1 oz. (shot) coconut rum

1 oz. (shot) triple sec

2 oz. (2 shots) cranberry juice

1/2 oz. (half shot) blue curacao

Purple Avalanche

1 oz. (shot) Absolute Citron

1/2 part lemonade

1/2 part POM pomegranate juice

Purple Moon

1 oz. (shot) vodka

1 oz. prepared cherry-flavored drink

1 oz. prepared blue kool-aid drink

1/2 part lemonade

1/2 part cranberry juice

Ice shards

Main Dish:

Melezani la Pasta (Eggplant & Bowtie Pasta)

8 oz. bowtie pasta cooked

8 oz. eggplant chopped

3 large cloves of garlic, minced

1/2 cup parmesan cheese, grated

1/4 cup red pepper, chopped

1/4 cup olive oil

1/4 fine chopped Italian parsley

Salt and pepper

Start by adding the pasta to a pot of boiling water and cook for the directed amount of time. Don’t forget to add a pinch of salt to the water as well, which will enhance the flavor of the pasta when it’s finished cooking.

In a large saute pan, pour in the olive oil and when hot enough, saute the garlic until it becomes aromatic. Add the chopped eggplant, red pepper, and a sprinkle of salt and pepper and saute at medium heat until both vegetables have become tender, about seven minutes.

When the pasta has finished cooking, drain completely and add to the sauteed vegetables. This will allow for the pasta to become coated in the garlic-infused oil.

Finish by adding the parsley and parmesan cheese to the dish. Stir until everything is incorporated and serve in a large dish.

Dessert cocktail:

Purple cow shake:

1/2 cup grape soda

2 cups vanilla ice cream

1 teaspoon vanilla extract

1 cup milk

Ice cubes

In a blender, combine all of the ingredients and blend until thick and frothy. Pre-dinner cocktail or dessert, this purple milkshake is a great addition to any meal.

I hope this menu inspires you to host your own purple-inspired cocktail night or dinner party. Remember, anytime is a good time to toast your glasses, but it’s always better when you have something to toast to!
